Skyrim has to be up there.

BioShock was really good.

Planescape probably goes near the top.

Kingdom come deliverance wasn't so much a built world but was very very immersive.

Borderlands despite it's silliness was a pretty fun story driven world.

Dwarf fortress and rim world both do a pretty fascinatingly good job of procedurally generating a world that feels like it's been pre designed.
