Ngl, I did some short order work here and there.
Cooking eggs is pretty fucking boss. You get in the zone, keep things moving, and you get a dopamine hit from nailing perfect eggs one after another. Flow state + satisfaction for such a low investment in learning curve is nice
Love to see those carbon steel pans, but eggboy has overloaded them with oil.
Those pans are naturally non-stick and you only need a bit of oil in them for a good fry and to keep the non-stickyness. That much oil can make them tacky and will make the eggs crunchy and dry insted of giving them that tasty pan-fried surface finish.
I always hear about how good they are with anti stick and what not. I have never seen it work. I doubt they are as good and as little effort.
