AI stuff has dried up for me, anyone know a way I could make a little over a grand online by month end? I've got plenty of time to throw at whatever is out there.

With that timeframe you might be better off watching nextdoor, craigslist, and Facebook for local gigs like yardwork and moving boxes and the like. Or posting yourself maybe. Had a friend making an extra few hundred a week helping people after work and on weekends with their lawns and housekeeping and whatnot.
Online stuff:
Prolific.com surveys can be decent. Not good hourly rate but can fill in some cracks, maybe couple hundred bucks. Pays quickly to PayPal upon request.
Usertesting is a site I've never done but seen people potentially make a lot in their first couple months
Swagbucks is usually pennies but depending on offers you might be able to make a couple hundred bucks.
I'd keep checking dataannotation for approval, that'd be the highest hourly and instant payouts.
Mturk and clickworker (uhrs primarily) were my main sources of income at different times, but I haven't used them in a while. May take a while to approve and payout.
3playmedia seems to be hiring voice writers, not sure what the work entails but the company is legit. Used to be my main source of income for years doing regular captioning.
Other names I'm seeing in online work discussions: intellizoom, verbit, respondent, cloud connect, proxypics, alignerr, outlier.
Also various online CS jobs that don't pay great. Phone or chat. Depending on your certs some might pay better.
Focus groups can pay 200+ if you can find them.
Yeah those “too good to be true” AI/mechanical Turk-type jobs are usually thinly veiled scams. Eventually they’ll stop paying or randomly terminate you, etc.
If you have some kind of circus trick (drawing, editing, copywriting, etc), you could try fiverr. It’s quickly evolved into low-cost creative gig work and some creators charge up to hundreds for more complex commissions or larger jobs.
If you don’t have a circus trick, the only other thing I know of is the “slave labour” (yes it’s really called that) community on Reddit. That one is fully peer to peer so be very cautious but people post more menial tasks there from time to time.
Finally you could farm Bing Rewards and survey websites. It would be a truly pitiful wage but it converts time into money (gift cards) using the internet. This is really cruel and unusual punishment but… it’s an option.
Edit: if you’re any good (like, top 1-5%) at multiplayer video games, kids will pay tons of money to boost their accounts on the competitive ladders. This is by far the most lucrative and easiest option but it requires you to already be good.

Telling an untrained rando to branch out into cybercrime is far, far more likely to end up in either federal prison or a liveleak execution than a painlessly obtained rent check.
My big issue with your post is that if they are asking for fast cash instead of committing the breach themselves, their level of savvy is nowhere near what would be needed to cover their tracks properly.
