Right, to me it feels dishonest and pandering to change a character later like this. I don't feel it's winning points with anyone.
Not what you're asking, but relevant: I've mostly played in homebrew worlds and exclusively DMd homebrew, and what ive found is actually having the different races have some representation means more than their historical heritage in the world. If it comes up, maybe in prep detail it out a little. If there's only one Tabaxi in the world, it's origin is more suspicious (needs explanation) than if players encounter them occasionally.
Wanting my players to be open to trying less common races I recently made a d100 including every race I could find so that the NPCs can be anything instead of whatever pops in my head in a rush to describe the shopkeep.

That's really cool! I'm knee deep in BG3, but if I were to get something, it'd be ff9 on steam, haven't played it in probably 20 years. See how it hits now as an adult.
A few more people would probably use bikes, but I don't see how this solves the issue, no matter how good the cycling infrastructure we won't see cars and gas stations just disappear. I suspect I don't see the goals as you intend them, but I don't see people dropping there kids off at school on bikes or biking to and from a restaurant to eat a steak dinner, not to mention city services and transportation. If your target is really emissions I'd suspect that electric cars and limiting private jets would make more progress.
Right, I was thinking that sushi doesn't look impressive, and to think $120 is the bill I'd guess they're paying for what would be considered a nice restaurant or some overpriced wine. Just buy the bottle.
